Za'atar seasoning mix in the Middle East, traditionally served with meals in a bowl. First bread soaked in olive oil, quark or yoghurt and then Zatar. This may serve on various occasions throughout the day. It is popular throughout the Middle East and is used for meats, salads, vegetables, cheese and bread alone.
Za'atar women prepare themselves and the recipe is kept strictly confidential sometimes even within the family. There are so numerous variations Zatar, the composition and the proportions of components depends on the habits of the region, a particular clan or family. The primary component, however, Syrian oregano (Origanum syriacum, also called marjoram, oregano or Syrian) which is relatively rare, grows on stony ground and preparing Zatar is collected in the wild. Other essential ingredients spice sumac and then roasted sesame seeds.
